The spaces between the bricks will be filled in with castable refractory cement.
The purpose of the fire brick is to serve as a thermal storage mass. It will soak up heat from the hot air passing from the firebox to the cooking chamber. This serves two purposes. It will moderate any sudden spikes or dips in heat from the firebox, and will extend the time beteween adding fuel to the fire.
